Shredded chicken burrito wrap

Ingredients

  • 500g chicken breast, poached
  • 4 wraps 
  • 1 cup black beans, drained
  • 1 red capsicum, diced
  • 1 red onion, chopped finely
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • ½ tsp dried oregano
  • ½ teaspoon black pepper
  • ¼ tsp cayenne pepper
  • 4 tbsp cottage cheese
  • 1 tsp olive oil
  • Spinach

 

Method

  1. Poach chicken as per instructions.
  2. Meanwhile heat a fry pan with a little oil. Add onion and capsicum and saute until soft.
  3. Add spices and black beans to the pan and cook for another 5 minutes on a light simmer. 
  4. Assemble a quarter of the chicken and bean mix into the wrap. Add 1 tbsp on cottage cheese and a handful of spinach before wrapping and enjoying!
