Black bean burrito

Ingredients
- 2 X Mountain Bread Quinoa Wraps
- 1 tbsp olive oil
- 1 red onion
- ½ cup frozen corn and peasÂ
- 1 carrot, grated
- 400g tinned black beans
- 2 large tomatoes, diced
- ½ avocado, mashed with 1 tsp lemon juice
- 40g green vie vegan cheese or regular cheese
- 2 tbsp hummus

Method
- Sautee the red onion with the olive oil for 5-10 minutes. Add the corn, carrot, tomatoes and black beans and cook for a further 5 minutes on a medium heat.
- Split the mixture between the two wraps and add ½ the avocado, hummus and cheese to each wrap.
