RED LENTIL BEEF PASTA

Ingredients:
- 250g red lentil pasta
- 1 eggplant, cubed
- 2 carrots, diced
- 1 red onion, chopped
- 2 garlic cloves
- 500g lean beef mince
- 1/2 cup tomato paste
- 1 can tomatoes (crushed)
- 1 cup paramasen
Method:
- Saute the onion, garlic and carrot in a little oil
- Add beef mince and stir until brown
- Add eggplant, tomato paste and crushed tomato. Cook for 20 minutes on low heat.
- Meanwhile cook pasta as per packet instructions.
- Add pasta to sauce, serve into bowls and add cheese.
