Cottage Cheese Banana Bread

Serves: 6 large slices
Ingredients:
- 1 heaping cup mashed ripe banana (about 3 small to medium bananas
- 1/2 cup loosely packed brown sugar or pure maple syrup
- 1/3 cup olive oil
- 2 eggs
- 2/3 cup cottage cheese
- 1/4 cup hemp hearts
- 1 teaspoon vanilla extract
- 1 3/4 cup white whole wheat flour (or all-purpose)
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup mix-ins of choice like walnuts, chocolate chunks, pecans, pumpkin seeds, coconut or dried cranberries
Method:
- Preheat over to 180 degrees.
- Combine all wet ingredients into a blender. Blend until smooth.
- Add to all dry ingredients in a large bowel and stir until combined.
- Add to a lined loaf tin and bake at 180 degrees for 40-45 minutes until cooked.
