Pulled Pork Tacos with Simple Slaw

This is a great option to make instead of using high-fat cuts of pork, using pork tenderloins.

Ingredients

  • 680g Pork tenderloin, trimmed into 4 pieces
  • 1 large onion
  • ¼ cup no sugar added BBq sauce
  • 1/2 tsp garlic salt
  • 1 tsp salt
  • 1tsp chilli powder
  • 8 medium tortillas
  • 1 bag of premade slaw
  • Juice of one lime
  • ½ tsp celery salt
  • 1 tbs olive oil
  • 2 tbs low fat yogurt

Method

  1. Preheat oven to cast iron oven over medium heat. Add pork, onion, BBQ sauce, garlic salt, normal salt, chilli powder. Saute for 5 minutes, then cover and cool for additional 25 minutes until cooked. 
  2. While pork in cooking prepare the slaw by adding salad items to a bowl and add in dressing ingredients. 
  3. Once pork is cooked, transfer to a bowl and use two folks to shred, then place meat back into the pot to toss with sauce. 
  4. Store in an airtight container and serve on 2 warmed tortillas.
