Protein blueberry muffins

Muffins that actually help you meet your protein intake? Yes please. They also freeze well and are delicious warmed in the microwave.

Yield: 8 Muffins

Ingredients

  • 1 cup all-purpose flour
  • ½ cup vanilla protein powder
  • 1tsp baking soda
  • ½ tsp salt
  • 1 cup cottage cheese
  • 2 eggs
  • â…“ cup maple syrup
  • Zest of 1 lemon
  • 1.2 cup fresh blueberries

Method

  1. Preheat oven to 175 degrees. Line 12- cup muffin tin with patty liners.
  2. Whisk together flour, protein powder, baking soda, and salt in a medium bowl. 
  3. In a blender, combine cottage cheese, eggs and maple syrup. Blend until smooth. 
  4. Add cottage cheese mixture to dry ingredients, and then mix gently to combine. Fold in lemon and blueberries. 
  5. Scoop into muffin tin. Bake for 22 to 25 minutes or until the muffins are puffed and golden and cooked when skewed.
  6. Once cooked, remove from the oven and allow it to cool.
