Whisk eggs and eggwhites in a bowl until well combined. Spray a non-stick frying pan with oil, and heat over medium-low heat.
Pour in egg mixture. Cook for 30 seconds or until mixture starts to set around edges, then using
a wooden spoon, gently stir mixture in a folding motion for 1-2 minutes or until softly set.
Divide scrambled egg, salmon and avocado between serving plates. Scatter chives over and season with freshly ground pepper. Serve with toast.
