Whisk eggs and eggwhites in a bowl until well combined. Heat oil in a medium non-stick frying pan over medium heat. Add mushrooms and cook for 2 minutes or until tender. Add spinach and cook, stirring, until just wilted.
Pour in egg mixture. Cook, without stirring, for 5 minutes. Add tomatoes and cook for a further 5 minutes or until egg is set at sides and underneath.
Sprinkle over parmesan. Place under grill and cook for 2-3 minutes or until lightly golden and set on top. Alternatively place in oven if your fry pan’s handle is heat proof. Set aside for 5 minutes.
Meanwhile, toast bread and spread with avocado. Cut frittata into 4 pieces and transfer to plates. Serve with avocado toast.
