CHICKEN, PEAR AND CABBAGE SALAD

Meal Prep Time:  30 minutes

Serves: 2 

Ingredients:

  • 200g Raw, lean chicken breast
  • 1 Tbls balsamic vinegar (20g)
  • 1 Tbls honey (40g)
  • 2 Cups white cabbage (140g), shredded
  • 20g Rocket
  • 1 Pear (150g), cored and thinly sliced
  • 60g Low fat feta
  • 1 Tbls walnuts (8g), toasted and chopped

Method:

  1. 1. Heat a non-stick frying pan over medium heat. Spray
    chicken with oil and cook for 5-6 minutes each side
    or until cooked through. Rest for 5 minutes, then
    thickly slice.
  2. Meanwhile, place balsamic vinegar and honey into
    a small heatproof bowl. Microwave for 10 seconds,
    then stir to combine. Cool.
  3. Place cabbage, rocket, pear and chicken into a large
    bowl. Season with freshly ground black pepper and
    drizzle with the dressing. Toss gently to combine.
  4. Divide between plates. Crumble feta over and
    sprinkle with walnuts to serve
