TOMATO AND CHICKPEA TOAST

Meal Prep Time:  35 minutes

Serves: 2

Ingredients:

  • 1 brown onion, thinly sliced
  • 2 tbsp olive oil
  • 2 garlic cloves, thinly sliced
  • 2 tsp sweet paprika
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • Salt and Pepper to taste
  • 1 X 400g tin diced tomatoes
  • 1 X 420g tin chickpeas, drained
  • 2 pieces of multigrain bread

Method:

  1. Sautee the onion with the olive oil for
    5-10 minutes or until caramelized.
  2. Add the garlic and cook for a further 2-3 minutes.
  3. Add the spices and chickpeas and cook for
    3 minutes, stirring continually.
  4. Add the tinned tomatoes and leave to simmer
    for 10 minutes, stirring often.
  5. Toast the bread and serve.
