Banana, berry and oat loaf

Ingredients

  • 1 ¼ cup oats
  • 1 ¼ cup plain flour
  • ¼ cup maple syrup
  • 2 tsp baking powder
  • 2-3 ripe bananas, mashed
  • ¼ cup plant milk
  • 1 cup mixed berries
  • 1 tsp cinnamon

 

Method

  1. Preheat the oven to 180 degrees. Line a loaf tin with baking paper.
  2. Add the dry ingredients into a mixing bowl.
  3. Add the mashed bananas, syrup and milk. Mix until combined but do not over mix.
  4. Fold in the berries.
  5. Pour into the tin and bake for 50 minutes. Turn the tin half way through. Skewer should come out clean. Cool for 15 minutes before serving.
