PULSE PASTA BAKE

Ingredients:
- 1 box (250g) San Remo Red Lentil Pasta
- 1 pack (400g) Veggie Delights savory mince
- Button mushrooms (200g), quartered
- 1 large zucchini (370g), chopped
- 1 red onion, diced
- 7g olive oil spray
- 60g vegan mature cheddar style sheese, grated
- 3 cups Asha’s Tomato Sauce or 3 cups passata
- 1 tsp garlic mince
- 1 tsp dried rosemary
- Salt
Method:
- Cook pasta as per instructions and set aside.
- Preheat oven to 180
- In a pan heat the olive oil and fry the onion and veggies with the spices until softened.
- Add the mince and cook for 5-10 mins stirring often.Â
- Add veggie mix, pasta and tomato sauce to an oven proof bake dish. Sprinkle on cheese.
- Cook for 10 minutes covered with foil, uncover and cook for 5 mins or until top layer crisps.Â
