Serves: 5 

Ingredients:

  • 1 box (250g) San Remo Red Lentil Pasta
  • 1 pack (400g) Veggie Delights savory mince
  • Button mushrooms (200g), quartered
  • 1 large zucchini (370g), chopped
  • 1 red onion, diced
  • 7g olive oil spray
  • 60g vegan mature cheddar style sheese, grated
  • 3 cups Asha’s Tomato Sauce or 3 cups passata
  • 1 tsp garlic mince
  • 1 tsp dried rosemary
  • Salt

Method:

  1. Cook pasta as per instructions and set aside.
  2. Preheat oven to 180
  3. In a pan heat the olive oil and fry the onion and veggies with the spices until softened.
  4. Add the mince and cook for 5-10 mins stirring often. 
  5. Add veggie mix, pasta and tomato sauce to an oven proof bake dish. Sprinkle on cheese.
  6. Cook for 10 minutes covered with foil, uncover and cook for 5 mins or until top layer crisps.
