BLACK BEAN BURRITO

Black bean burrito

Ingredients

  • 2 X Mountain Bread Quinoa Wraps
  • 1 tbsp olive oil
  • 1 red onion
  • ½ cup frozen corn and peas 
  • 1 carrot, grated
  • 400g tinned black beans
  • 2 large tomatoes, diced
  • ½ avocado, mashed with 1 tsp lemon juice
  • 40g green vie vegan cheese or regular cheese
  • 2 tbsp hummus

 

Method

  1. Sautee the red onion with the olive oil for 5-10 minutes. Add the corn, carrot, tomatoes and black beans and cook for a further 5 minutes on a medium heat.
  2. Split the mixture between the two wraps and add ½ the avocado, hummus and cheese to each wrap.
