Butter chicken with rice

Ingredients

  • 1kg chicken breast
  • 2 tbsp butter
  • 2 red onions
  • 4 garlic cloves
  • 1 tsp ginger
  • 2 tsp garam masala
  • 1tsp curry powder
  • ½ tsp chilli flakes
  • 60g tomato paste
  • ⅓  cup chicken stock
  • ½ cup Greek yogurt
  • 1 tbsp corn flour
  • 300g uncooked rice

 

Method

  1. Cook rice as per instructions.
  2. Place butter in a large pot on medium heat. Stir in spices and heat until fragrant. Add chopped onion and surtee until soft. 
  3. Add chicken breast to a slow cooker, adding stock and tomato paste. 
  4. Cook for 3-4 hours. Add yogurt and corn flour in the final 30 minutes of cooking. Serve with greens.
