MARINARA PASTA

Serves:

Ingredients:

  • 1g Olive oil spray
  • 1 Onion (89g), chopped
  • 3 Cloves garlic (9g), crushed
  • 1/2 Tsp chilli flakes (1g)
  • 1 Fillets anchovies (4g), chopped
  • 1 x 400g cans diced tomato (400g)
  • 1 Tbls lemon juice (20g)
  • 300g Fresh marinara mix
  • 1 Packet rice pasta (250g)
  • 2 Tsp oregano leaves (2g)

Method:

  1. Spray a large deep non-stick frying pan with oil
    and heat over medium-high heat. Add onion, garlic,
    chilli and anchovy, if using. Cover and cook, stirring
    occasionally, for 3-4 minutes or until the onion is
    soft.
  2. Add tomatoes, lemon juice and 1⁄4 cup (60 ml)
    water. Cook for 2 minutes. Add marinara mix. Cover
    and cook for 3-4 minutes or until seafood is just
    cooked through. Season with freshly ground black
    pepper.
  3. Meanwhile, cook pasta in a large saucepan of boiling
    water following packet directions and drain.
  4. Divide pasta between bowls and top with marinara
    sauce and oregano.
