CARAMELISED PORK WITH SWEET POTATO MASH AND APPLES

Meal Prep Time:  30 minutes

Serves: 2 

Ingredients:

  • 250g Sweet potato, chopped
  • 2 Tsp kecap manis (sweet soy sauce) (10g)
  • 2 x 110g Lean pork fillet (220g)
  • 1g Olive oil spray
  • 1 Red apple (166g), cut into wedges and cored
  • 100g Green beans, trimmed

Method:

  1. Cook sweet potato in a saucepan of boiling water
    for 10-15 minutes or until tender. Drain and mash.
  2. Meanwhile, brush kecap manis over pork steaks.
    Spray a non-stick frying pan with oil and heat over
    medium heat. Add pork and cook for 3 minutes
    each side or until just cooked through.
  3. Add apples to pan and cook for 3-4 minutes or until
    tender. Cook beans in a small saucepan of boiling
    water for 2-3 minutes or until bright green and just
    tender. Drain.
  4. Divide mash and beans between plates.
    Top with pork and apples to serve.
