CHICKEN AND GRILLED VEGGIE PIZZA

Serves: 2

Ingredients:

  • 1 zucchini
  • I eggplant
  • 2 tbsp tomato paste
  • 2 tbsp(s) cottage cheese
  • 200g poached chicken, sliced
  • 1/2 small red onion, sliced into rings
  • 1/2 cup mozzarella
  • 2 x thin crust high protein pizza base (Woolsworth brand)

Method:

  1. Slice zucchini and eggplant into strips, lightly salt and leave for on plate.
  2. Leave for 30 minutes and pat dry, lightly grill veggie in a grill pan.  
  3. Spread 1 tbs of tomato paste on each base. 
  4. Ad onion, cottage cheese, chicken, veggies and cheese
  5. Bake for 30 minutes at 180 degrees.
