Chicken parma and chippies

Ingredients

  • 2 small chicken breast (150g approx)
  • 300g spud lite, cup into chips
  • ¼ cup breadcrumbs
  • 1 tbsp flour
  • 1 egg 
  • ¼ cup milk
  • 2 tbsp cottage cheese
  • 2 tbsp tomato paste
  • 20 green beans
  • 1 tbsp olive oil

 

Method

  1. Tenderise the chicken breast to make them flat. Coat in flour, egg and milk mixture and then bread crumbs. Add herbs and spices to breadcrumbs for extra seasoning. 
  2. Preheat the oven to 180 degrees and on a piece of baked tray place chips and chicken breast. Drizzle with a little olive oil and bake for 30-40 minutes. 
  3. When the chicken starts to look crispy, top with tomato paste and cottage cheese and bake for another 10 minutes. 
  4. Serve with green beans
