Chickpea choc chip cookies

Ingredients

  • 1 tsp salt
  • 80g maple syrup
  • 100g dark choc chips (Belgian dark chocolate 85%)
  • ½ cup plant milk
  • ⅓ cup oats
  • 1 x 400g tinned chickpeas, drained and dried

 

Method

  1. Preheat the oven to 180.
  2. Put all the ingredients except the choc chips in a blender and blitz until smooth. Stir through the choc chips.
  3. Split the mixture in half and bake 2 x 10 cookie batches. Bake for 15-20 minutes or until firm to touch.
