Chilli chicken ramen

Ingredients

  • 800ml chicken stock
  • 1 tsp sriracha flakes
  • 4 tbsp soy sauce
  • 1-2 garlic, crushed
  • 2 cm ginger, minced
  • 200g ramen noodles
  • 300g chicken breast
  • 1 carrot, grated
  • ½ red onion
  • 2 spring onions
  • 1 fresh red chilli
  • Handful of coriander
  • Lime for garnish

 

Method

  1. Mix sriracha, soy sauce, garlic and ginger in a small bowl. Marinate the chicken in the bowl for an hour. 
  2. Bake chicken in the oven at 180 degrees for 25 minutes.
  3. While chicken is cooking, cook noodles as per instructions and heat stock. 
  4. Pour stock into separate bowls, add half sliced chicken, carrot, onion and spring onion.
