Choc protein granola

Ingredients

  • 1 cup rolled oats 
  • 50g seed chia mix
  • ¼ cup shredded coconut
  • 35g cup rice puffs
  • 1 scoop of protein powder 
  • 2 tbsp cacao powder 
  • Pinch of sea salt
  • 1⁄4 cup coconut oil, melted
  • 1⁄2 cup maple syrup

 

Method

  1. Preheat the oven to 160° fan-forced. Line a baking tray with non-stick paper.
  2. In a large bowl, combine all the dry ingredients, and mix until combined. In a separate bowl, whisk together the wet ingredients.
  3. Add the wet ingredients to the dry mixture and mix well, ensuring that everything is coated. 
  4. Spread the granola evenly over a baking sheet. Bake for 8 minutes, then stir and bake for another 8 – 10 minutes, leaving as many clusters as you want together.
  5. Remove from the oven and allow the granola to completely cool. The granola should firm and go crispy as it cools. You can then break up the granola into further chunks if you would like.
