Serves: 2

Ingredients:

  • 6 free range eggs
  • 10 cherry tomatoes, halved
  • 1 cup of broccoli, diced
  • 2 flat mushrooms, sliced
  • 1/2 cup grated cheddar
  • 1 tablespoon olive oil

Method:

  1. Preheat oven to 180. Beat the eggs and mix in the
    tomatoes, broccoli and mushrooms.
  2. Coat the pan with the olive oil.
  3. mixture and sprinkle the cheddar
    over the top.
  4. Cook uncovered in the oven for 15 minutes
