CORN FRITTERS

Serves: 3

Ingredients:

  • 1 X 400g creamed corn
  • 1 X 400g fresh or tinned corn
  • 1/2 cup lentil flour
  • 1/2 cup nutritional yeast
  • 2 cups vegetables of choice, diced (I used peas and onion)
  • 1 tsp ground cumin
  • 1 tsp group coriander
  • 1/2 tsp salt

Method:

  1. Combine all the ingredients in a bowl and mix together well.
  2. On a low heat and in a non stick pan fry 1/2 cup of batter for 3-4 minutes then flip and cook for another 2-3. Repeat with remaining batter.
  3. Serve with a poached egg!
