Cottage Cheese Banana Bread

Cottage Cheese Banana Bread

Meal Prep Time:  60 minutes

Serves: 6 large slices

Ingredients:

  • 1 heaping cup mashed ripe banana (about 3 small to medium bananas
  • 1/2 cup loosely packed brown sugar or pure maple syrup
  • 1/3 cup olive oil
  • 2 eggs
  • 2/3 cup cottage cheese
  • 1/4 cup hemp hearts
  • 1 teaspoon vanilla extract
  • 1 3/4 cup white whole wheat flour (or all-purpose)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup mix-ins of choice like walnuts, chocolate chunks, pecans, pumpkin seeds, coconut or dried cranberries

 Method:

  1. Preheat over to 180 degrees. 
  2. Combine all wet ingredients into a blender. Blend until smooth. 
  3. Add to all dry ingredients in a large bowel and stir until combined.
  4. Add to a lined loaf tin and bake at 180 degrees for 40-45 minutes until cooked.
