Delicious Chickpea Protein Balls

Everybody loves a delicious protein ball. But it is also very easy to crush a lot of calories in a few bites without necessarily being a great protein hit.

These beauties taste just like delicious balls of peanut butter cookie dough. We also used a mixture of powdered peanut butter and real peanut butter  to save on calories from fat and add additional texture and flavour.

Ingredients:

Serves 12/ Calories 139/ Fat 7g/ CHO 13g/ Protein 6g

  • 1 can drained  Chickpeas
  • 1 tbsp Chia Seeds
  • 2 tbsp Pure Maple Syrup
  • 1 1/2 tsp Virgin Coconut Oil
  • 1 tsp Pure Vanilla Extract
  • 1/8 tsp Pure Almond Extract
  • 1/8 tsp Sea Salt
  • 1/2 cup Creamy Peanut Butter
  • 3 tbsp Powdered Peanut Butter
  • 1/3 cup Chocolate bit

Method:

1. Add well-drained chickpeas, ground flaxseed, maple syrup, melted coconut oil, vanilla and almond extracts, salt, and cayenne to a food processor. Cover and puree until creamy, about 2 minutes.
2Add the peanut butter and peanut powder and blend until well combined, about 1 minute.
3Add the chocolate chips and pulse 2 or 3 times to evenly combine. (Hint: If you prefer chocolate chips to keep their shape instead of “melt” into the mixture, chill the mixture for 1 hour then stir in chocolate chips.)
4Transfer the mixture to a bowl. With clean hands, form into 12 balls, about 2 tablespoons each.
5Place in a sealed container. Store in the refrigerator for 1 week or freezer for 1 month.
