EGG, SPINACH AND CHEESE CUPS

Meal Prep Time:  20 minutes

Serves: 3

Ingredients:

  • 8 eggs
  • 2 cups of spinach, torn or cut up.
  • 1/2 cup cheddar cheese
  • 2 tomatoes, diced
  • Salt and pepper to taste

Method:

  1. Preheat the oven to 180 degrees. Grease a
    12-hole muffin tray or line with baking paper.
  2. Beat the eggs and mix in the spinach and tomato.
    Separate the mixture evenly and sprinkle each
    cup with cheddar. Bake at 180 degrees for 10-15
    minutes or until cooked through. Leave in a sealed
    container in the fridge for an easy on-the-go breakfast.
