POTATO HASH

Meal Prep Time:  60 minutes

Serves: 4

Ingredients:

  • 450g firm tofu sliced lengthways into 4
  • 350g sweet potato, diced
  • 3 medium white potatoes, diced
  • 1 brown onion, diced
  • 1 tablespoon onion powder
  • 1 teaspoon cumin powder
  • 1 teaspoon sweet paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • Pepper to taste
  • 1 + 1/2 tablespoons olive oil

Method:

  1. Combine 1 tbsp of olive oil, potatoes and spices
    and roast at 220 degrees for 45 minutes or until
    crispy, stir the potatoes every 15 minutes.
  2. Sauté the brown onion in ½ tbsp of olive oil with salt
    and pepper. Cook for 5-10 minutes stirring often.

  3. aside and in the same pan fry the
    slices of tofu for 2-3 minutes each side until golden
    brown.
  4. Top the tofu slices with 1/3 of the hash.
