Fibre Rich Zucchini Fritters

Are you looking for an easy way to get more fibre and vegetables into your breakfast?

These zucchini fritters were the bomb. And served with a gooey egg, you can not go wrong.

Zucchinis are an awesome weight loss veggie, because they are high in fibre and low in calories. Further, they are high in vitamin C, folate, and beta-carotene, which protects your body against  harmful chemicals that lead to cancer and disease.

Why is fibre important?

While this recipe contain 50g of carbohydrate, 14g of this comes from dietary fibre. Generally speaking, you should aim for around 25g-30g of fibre per day. Fibre plays an important role in controlling your blood sugar levels. Fibre also takes up lots of space in your digestive tract, which is one of the reasons why it helps you stay satisfied longer. This recipe could be the perfect way to ditch the bread and get you through to your next healthy meal time break.

In case you are wondering, fibre is a form of carbohydrate but does not act as an energy source in the way that simple sugars do! So feel free to fill up on fibre rich veggies guilt free!

Zucchini Fritter with Poached Egg

Serves 2/ Calories 438/ CHO: 18g/ Protein 26g/ Fat 14g

Ingredients

  • 2 small zucchinis, grated and water squeezed out
  • ¼ cup of quinoa flakes
  • ¼ cup coconut flour
  • 2 eggs for batter
  • Chopped mint
  • ½ cup frozen peas
  • 2 eggs to serve with fritter

Method

  1. In a bowl place zucchini, quinoa, coconut flour, eggs, mint and peas.
  2. Over medium heat, melt 1 tbsp coconut oil and make 4 same sized patties. Cook for several minutes each side.
  3. Poach egg in the microwave and plate on top of the fritters’ with rocket.
