Glorious Apple and Blackberry Muffins

Did you know we are coming into apple season in Australia?

I buy apples with good intentions to have them as a ‘grab and go snack’, but often they end up hanging around in my fruit box unloved and uneaten.

This is a super easy, delicious muffin recipe that will hit the spot as a mid morning snack! These muffins contain significantly less sugar than regular muffins as they are sweetened with fruit and maple syrup. They are also packed full of fibre, which will help stabilise your blood sugars and feeling more satisfied.

Ingredients

  • 1 1/4 cups of oat flour
  • 1 cup almond flour
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 eggs, slightly beaten
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 cup chopped apple
  • 1 tsp cinnamon
  • 18 frozen blackberries

Method

  1. Preheat oven
  2. Combine all dry ingredient and stir well.
  3. Add eggs, maple syrup, vanilla, almond milk, oil and vinegar. Stir until just combined.
  4. Add chopped apple and cinnamon.
  5. Divide mixture into 6 large muffin cases and press in 3 black berries.
  6. Cook at 180 degrees for 25 minutes.
