Increase your Fibre- Honey and Rasin Protein Biscuits

Are you after an easy snack recipe? This recipe could work equally well for breakfast too.

I used my favourite Vanilla Ice Cream Optimum Standard Whey Protein and because of the sweetness of the powder, you can easily reduce the amount of honey you need to use.

Honey, oats, chia and coconut oil are staples in my pantry. There are so many glorious food combinations you can use with these key ingredients.

Oats are a fantastic source of soluble and insoluble fibre. This is why it is source a power house when eaten at breakfast. A 1/3-cup serving of uncooked oats contains 2.7 total grams of dietary fiber; of this amount, 1.3 grams are insoluble fiber and 1.4 grams are soluble fiber. Insoluable fibre is not broken down by the body therefore not adding to the overall calorie value of the meal. Fibre plays an important role in lowering blood cholesterol, adding bulk to the still, making a meal feel more feeling and keeping your inside healthy. Oats can also be used a substitute as flour in many recipes, like muffins and pancakes.

Ingredients:

  • 100g oats
  • 50g protein powder
  • 2 tbsp honey
  • 2 tbsp butter
  • 1 tbsp coconut oil
  • 2 tbsp chia seeds
  • 1 tbs shaved coconut
  • 50g raisins
  • 1/4 water

Method:

1. Preheat oven to 180 degrees Celsius.
2. Melt the coconut oil, butter and honey in a saucepan.
3. Once melted, tip into a food processor along with the oats and whey protein and combine.
4. Once everything is mixed, add the raisins and stir through by hand (so they don’t get mushed).
5. Line a baking tray with grease-proof paper and empty your biscuit mixture and flatten and form into a small rectangle. Alternatively, shape into 6 individual biscuits

Cook for 15 minutes then divide into 6 biscuits.
