Preheat oven to 200°C. Divide spinach between muffin cups (ideally silicon). Crack an egg into each ramekin. Sprinkle with feta and season with freshly ground black pepper.
Place ramekins on a baking tray. Bake for 8-10 minutes or until eggs are just set. Serve with toast!
