Low Sugar Choc Chip Cookies

Ingredients

  • ½ cup Nativa sweetener
  • 1/2 cups (112g) salted butter 
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/8 tsp lemon juice
  • 1/2 cup plain flour 
  • 2 scoops (60g approx) protein powder
  • 1/4 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • ¼ cup Noshu dark chocolate chips

 

Instructions

  1. Preheat the oven to 180 degrees and line a large baking sheet(s) with parchment paper. 
  2. Cream butter and sugar in the bowl. Add the egg, vanilla, and lemon juice, blending until light and fluffy, scraping down bowl. 
  3. Add the flour, protein powder, oats, baking soda, and cinnamon, mixing for about 45 seconds. Don’t over mix. 
  4. Remove bowl from mixer and fold in the chocolate chips.
  5. Portion the dough into 15 balls weighing 45 grams each onto the baking sheet about 2″ apart. 
  6. Bake for 20 to 23 minutes, or until the edges are golden brown and the center is still soft.
