APRICOT TAGINE

Ingredients:
- 1g Olive oil spray
- 250g Raw, lean chicken breast, diced
- 1/2 Red onion (73g), thinly sliced
- 1 Tsp ginger (2g), finely grated
- 1 Tsp ground cumin (2g)
- 30g Dried apricot, chopped
- 1/2 Cup liquid chicken stock (120g)
- 1/4 Cup apricot nectar (60g)
- 3/4 Cups canned chickpeas (131g), rinsed and drained
- 240g Broccolini, steamed
Method:
- Spray a large saucepan with oil and heat over
high heat. Cook chicken, stirring occasionally, for
2-3 minutes or until golden. Transfer to a plate. - Spray pan again and return pan to medium heat.
Cook onion, stirring occasionally, for 5 minutes
or until softened. Add ginger and cumin, cook for
1 minute or until fragrant. - Return chicken to pan with apricots, stock, nectar
and chickpeas and bring to the boil. Reduce heat
and simmer for 10 minutes or until thickened
slightly. Serve with steamed broccolini.
