Ingredients
- 1 cup red lentils
- 4 cups water or stock
- 250g sweet potato, cubed
- 250g pumpkin, cubed
- 1 brown onion, diced
- 2 cloves garlic, minced
- 1 cm ginger, minced
- 400g tinned tomatoes
- 400g tinned chickpeas
- 2 tsp cumin powder
- 1 tsp coriander powder
- 2 tsp ground turmeric
- ½ tsp garam masala
- Pinch of cinnamon
- 10g olive oil spray

Method
- In a large pot, fry the onion in the oil for 5 minutes.Â
- Add the minced garlic and ginger, potato and pumpkin.Â
- Fry for 10 minutes stirring often.
- Add the diced tomatoes, and spices and fry for a further 2 minutes.Â
- Add the lentil and water/stock and simmer for 20-25 minutes or until the lentils and vegetables are soft.
