Ingredients

  • 1 cup red lentils
  • 4 cups water or stock
  • 250g sweet potato, cubed
  • 250g pumpkin, cubed
  • 1 brown onion, diced
  • 2 cloves garlic, minced
  • 1 cm ginger, minced
  • 400g tinned tomatoes
  • 400g tinned chickpeas
  • 2 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tsp ground turmeric
  • ½ tsp garam masala
  • Pinch of cinnamon
  • 10g olive oil spray

 

Method

  1. In a large pot, fry the onion in the oil for 5 minutes. 
  2. Add the minced garlic and ginger, potato and pumpkin. 
  3. Fry for 10 minutes stirring often.
  4. Add the diced tomatoes, and spices and fry for a further 2 minutes. 
  5. Add the lentil and water/stock and simmer for 20-25 minutes or until the lentils and vegetables are soft.
