sweet potato toast

Meal Prep Time:  40 minutes

Serves: 2

Ingredients:

  • 350g sweet potato, washed and sliced
    into 6 long pieces
  • Olive oil spray
  • 2 tsp sweet paprika
  • 1 avocado
  • 1/2 tbsp lemon juice
  • Salt
  • Pepper

Method:

  1. Heat the oven to 200 degrees fan forced.
  2. Line a tray with baking paper and place the sweet
    potato on the tray, spray both sides with olive oil.
  3. Sprinkle with the paprika, salt and pepper.
  4. Bake for 20 minutes, turn and then again for
    another 15. Meanwhile, mash the avocado with
    the lemon juice.
  5. Once the sweet potato has cooked, spread 1/6th
    of the avocado mash on each piece
