This week I was on a mission, to make some deliciously crunchy, yet chewy muesli bars … that actually stick together. This was actually my third attempt at making this recipe and while previous attempts did not disappoint in taste, I was left with what looked like granola.
I realised after consulting the braintrust of Instagram that I was making one fatal error. I was not letting the bars cool completely before trying to cut the tray. I can not stress this enough… if your muesli bars are falling apart on being cut, don’t be so impatient. Put the tray in the freezer for 3-4 hours before attempting to cut.

Preheat oven to 160 degrees celsius and get a slice tray ready
In a small bowl, place the coconut oil, honey and peanut butter. Micro wave for 30 seconds or so until runny.
Add all dry ingredients together and mix thoroughly. Add in the wet ingredients and stir through.
Pour the mixture into the prepared tray and press down firmly and evenly.
Bake for 25-30 minutes or until just golden. Allow to cool completely before cutting into slices.
