Oven baked salmon with pea cauli mash

Ingredients 

  • 3 cups cauliflower, cut into florets
  • 1 cup water
  • 2-3 cups green peas
  • 2 x 150g salmon fillets
  • 1/2 lemon
  • Salt and pepper

 

Method

  1. Preheat the oven to 180 degrees and line a baking tray with paper. Place salmon on trays and bake for 20 minutes or until cooked. 
  2. Meanwhile add cauliflower and salted water and simmer, covered for 8 minutes. Add peas and cook for another 2 minutes. Drain, reserving any liquid, and mash, adding any liquid if needed. 
  3. Serve salmon on a bed of mash with a lemon wedge.
