Perfect Protein Pancakes

These protein pancakes are my all-time favourite go to recipe. They have a fantastic balance of healthy carbs, protein and fat. You can substitute the whole egg for an equivalent amount of egg whites. Once made, you can add the toppings of your choice. Berries, greek yogurt and nuts are brilliant together.

Ingredients

  • 40g rolled oats
  • 2 whole eggs
  • 20g protein powder (I use Gold Standard Vanilla Flavour)
  • 1 tsp baking soda
  • 1 tbs cocoa
  • 1-2 tbs milk of choice

Method

  1. Place oats in the blender and whiz into a flour. Add protein powder, eggs, and baking powder continue to blender until smooth.
  2. Add a splash of milk so that the mixture is slightly runny
  3. Heat a fry pan over a medium heat with coconut oil.
  4. Place 1/3 mixture into a the pan and once cooked on one side flip and cook on the other side.
  5. Serve stacked onto of each other with a dollop of yoghurt, berries, maple syrup and a sprinkle of cacao nibs over the top.
