Poached chicken with sweet potato mash and coleslaw

Ingredients:

  • 500g sweet potato
  • ½ tsp cinnamon
  • 500g poached chicken breast, sliced
  • 2 carrot, grated
  • 3 cups purple cabbage, shredded
  • 1 bunch broccolini, chopped finely
  • 2 tbsp low fat mayo

 

Method

  1. Slice or poach chicken breast as desired.
  2. Meanwhile, chop the sweet potato into 2 cm chunks and boil until soft. Drain water and mash with a little sprinkle of salt and cinnamon.
  3. Combine carrot, cabbage and broccoli in a bowl with mayo and stir until mixed through.
  4. Assemble chicken, sweet potato and coleslaw and serve.
