Protein blueberry muffins

Ingredients

  • ½ cup wholemeal spelt flour
  • 40g (1 scoop) protein powder (I used Macro Mike blueberry flavour)
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 1 egg
  • 1 medium banana
  • 1 tsp baking powder
  • ½ cup frozen blueberries

 

Method

  1. Preheat the oven to 180 degrees.
  2. Place flour, protein powder and baking powder in a large bowl. Add oil, maple syrup and egg. Mix until just combined.
  3. Mash in banana and stir in blueberries.
  4. Spoon mixture to make 10 small muffins (I used silicon tin).
  5. Cook at 180 degrees for 20 minutes or until brown on top.
