RED LENTIL BEEF PASTA

Serves: 5

Ingredients:

  • 250g red lentil pasta
  • 1 eggplant, cubed
  • 2 carrots, diced
  • 1 red onion, chopped
  • 2 garlic cloves
  • 500g lean beef mince
  • 1/2 cup tomato paste
  • 1 can tomatoes (crushed)
  • 1 cup paramasen

Method:

  1. Saute the onion, garlic and carrot in a little oil
  2. Add beef mince and stir until brown
  3. Add eggplant, tomato paste and crushed tomato. Cook for 20 minutes on low heat.
  4. Meanwhile cook pasta as per packet instructions. 
  5. Add pasta to sauce, serve into bowls and add cheese.
