Roasted Salmon Taco with Mango Salsa

Nothing is easier than oven baked salom and salad. It can also easily be easily converted inro a delicious salmon bowl too with rice.

Serves: 4

Prep/ Cook Time: 30 minutes

Ingredients

  • 4 Pieces of salmon
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup greek yogurt
  • 8 small corn tortillas
  • 1 medium mango 
  • ½ diced onion
  • 1 cup diced cherry tomatoes
  • ½ cup chopped corriander
  • Juice of ½ lime
  • ¼ tsp salt
  • Hot sauce for serving

Method

  1. Preheat oven to 220 degrees. Line a baking tray with baking paper. 
  2. Place the salmon on abking tray and sprinkle with salt and pepper. Roast for 12-14 minutes or until cooked through. 
  3. While the salmon is cooking, make the salsa by combining mago, onion, tomatoes, coriander, lime juice and salt. 
  4. Transfer the salmon, salsa an greek yogurt.
