CHARGRILLED BROCCOLINI AND TOMATO SALAD WITH SALMON

Meal Prep Time:  20 minutes

Serves: 2 

Ingredients:

  • 1g Olive oil spray
  • 1 Bunch broccolini, trimmed and halved
  • 1 Punnet cherry tomatoes (250g)
  • 80g Baby spinach
  • 2 x 150g Salmon Fillets

Method:

  1. Spray a chargrill pan with oil and heat over
    medium heat.
  2. Cook broccolini for 2-3 minutes each side.
    Transfer to a plate.
  3. Add tomatoes to pan and cook for 3 minutes
    or until just tender.
  4. Divide broccolini, tomatoes, spinach and salmon
    between plates. Season with freshly ground black
    pepper to serve.
