SCRAMBLED EGGS WITH SMOKED SALMON AND AVOCADO

Serves:

Ingredients:

  • 2 Eggs 
  • 2 Eggwhite 
  • 1g Olive oil spray
  • 80g Smoked salmon
  • 1/2 Avocado (80g)
  • 5g Chives
  • 2 Slices wholegrain bread 

Method:

  1. Whisk eggs and eggwhites in a bowl until well combined. Spray a non-stick frying pan with oil, and heat over medium-low heat.

  2. Pour in egg mixture. Cook for 30 seconds or until mixture starts to set around edges, then using
    a wooden spoon, gently stir mixture in a folding motion for 1-2 minutes or until softly set.

  3. Divide scrambled egg, salmon and avocado between serving plates. Scatter chives over and season with freshly ground pepper. Serve with toast.
