Sheet Pan Smoky Chicken with Roast Veggies

Spice up your meal prep with a variety of flavours and textures on one easy sheet pan.

Serves: 4

Prep/ Cook time: 30 minutes

Ingredients:

  • 2 tsp smoked paprika
  • 1tsp brown sugar
  • ½ tsp garlic powder
  • ¼ tsp cayenne
  • Pinch of salt/ pepper
  • 1kg boneless skinless chicken
  • 2 diced sweet potatoes
  • 2 cups broccoli (cut into pieces)
  • 2 cups cauliflower (cut into pieces)
  • Sprinkle of salt and pepper
  • 2 garlic cloves

 

Method:

  1. Preheat oven to 200 degrees. Line a sheet pan with foil and spray with cooking oil.
  2. In a large bowl, combine spices, add chicken, and toss to coat. Place seasoned chicken on a tray, making sure to space the chicken evenly. 
  3. In another bowl add in veggies and garlic. Sprinkle with salt and pepper and toss. Add to chicken tray or cook on another tray separately. 
  4. Bake for 30 minutes until chicken is cooked and potatoes are tender. Remember to tossing veggies half way.
