Simple Baked Eggs with Kale and Feta Recipe

These baked eggs could not be more simple- a great snack or breakfast to have on the go or straight out of the fridge.

Ingredients

  • 180g Baby spinach  or kale
  • Free range eggs
  • Low-fat feta, crumbled

Method

  1. Preheat oven to 200°C.
  2. Divide spinach between ramekins. Crack an egg into each ramekin. Sprinkle with feta and season with freshly ground black pepper.
  3. Place ramekins on a baking tray. Bake for 8-10 minutes or until eggs are just set.
  4. Serve with toast!
