ONE POT CHILLI

Ingredients:
- 420g tin black beans
- 420g tin kidney beans
- 420g tin lentils
- 400g tin diced tomatoes
- 1 red onion
- 1 red capsicum (215g)
- 2 carrots
- 100g tomato paste
- 650g passata
- 650g sweet potato
- 300g button mushrooms
- 10ml olive oil
- Garlic powder, paprika, coriander powder, salt, pepper.
- 25g Macro textured vegetable protein (weighed dry, per serve)
Method:
- Add olive oil, carrots, onion and sweet potato to a large pot, cook for 5-10 minutes.
- Add remaining vegetables, tomato paste and spices to taste and stir until combined.
- Add passata and beans and simmer for 15-20 minutes or until potato is cooked through.
- Serve with 25g TVP.
