ONE POT CHILLI

Meal Prep Time:  35 minutes

Serves: 8

Ingredients:

  • 420g tin black beans
  • 420g tin kidney beans
  • 420g tin lentils
  • 400g tin diced tomatoes
  • 1 red onion
  • 1 red capsicum (215g)
  • 2 carrots
  • 100g tomato paste
  • 650g passata
  • 650g sweet potato
  • 300g button mushrooms
  • 10ml olive oil
  • Garlic powder, paprika, coriander powder, salt, pepper.
  • 25g Macro textured vegetable protein (weighed dry, per serve)

Method:

  1. Add olive oil, carrots, onion and sweet potato to a large pot, cook for 5-10 minutes.
  2. Add remaining vegetables, tomato paste and spices to taste and stir until combined.
  3. Add passata and beans and simmer for 15-20 minutes or until potato is cooked through.
  4. Serve with 25g TVP.
